Pectin

Definition

Pectin is a natural substance in fruit, especially citrus peel and quince, that helps jams and jellies set. High-pectin fruit set easily, while lower-pectin fruit such as peaches often need added pectin or lemon juice. This is why quince makes firm jelly and paste and why a lemon squeeze helps a peach jam. Follow a tested recipe for preserving, because mistakes in acidity or processing time can create food safety risks.
