Supreme
Definition
To supreme a citrus fruit is to cut the segments free from their membranes, and a supreme is the clean segment that results. Cut away the peel and pith first, then slice between the membranes to release neat wedges. The technique gives a tidy, tender result for salads, desserts and garnishes, and the juice left in the membranes can be squeezed out for dressings. It works well on grapefruit, pomelo and oranges.
