What is yuzu used for?

The answer

Yuzu is valued for its fragrant zest and juice, used in sauces, drinks, broths and desserts rather than eaten whole. The fruit has a bumpy yellow rind, many seeds and little pulp, so the aroma is the main attraction: tart citrus with floral and slightly resinous notes. It is closely associated with East Asian cooking, including ponzu-style sauces. Fresh fruit can be hard to find outside its growing regions, so bottled juice and dried zest are common.
