Zest

Definition

Zest is the thin, colored outer layer of citrus peel that carries fragrant oils. It has almost no bitterness as long as you avoid the white pith beneath, and it adds aroma to cakes, sauces, dressings, drinks and savory dishes. Remove it with a fine grater or peeler. If you plan to use zest, look for unwaxed fruit or scrub the skin well under warm water first. Yuzu is prized largely for its zest.
