Nomenclature
Macerating
Definition
Macerating is soaking cut fruit in sugar, juice or liquor so it softens and releases its juices. The result is a syrupy, tender fruit that suits desserts, toppings and fillings, and it is a no-cook way to improve fruit that is slightly underripe. Peaches, apricots and pineapple respond well. Adjust sugar to the sweetness of the fruit and add a small squeeze of acid to keep the flavor lively. See also: Poaching, Acidity, and the guide "Cooking and Baking with Yellow Fruits".
