Flavonoid

Definition

A flavonoid is one of a large group of plant compounds, some of which add pale yellow or cream tones to fruit. Many are nearly colorless, and the group is broad and varied. Flavonoids can contribute to the overall tone of a fruit or its skin alongside the carotenoids, while the related anthocyanins create reds, purples and blues such as the blush on a yellow peach or Rainier cherry. They are one reason a fruit's color is rarely a single pigment. See also: Carotenoid, Chlorophyll, and the guide "Why Fruits Are Yellow: The Pigments Behind the Color".
