Nomenclature
Ethylene
Definition
Ethylene is a natural gas released by ripening fruit that helps trigger softening and sweetening in nearby fruit. Bananas and apples give off plenty of it, which is why a ripe banana in a loosely closed paper bag speeds up a hard peach or mango. It also means ethylene-producing fruit should be kept apart from ethylene-sensitive produce such as leafy greens. Sealed plastic bags are a poor choice because they trap moisture and encourage mold.
